Essential Tips for Baking the Best Vegan Christmas Cookies
- Sift the Confectioners’ Sugar: This is crucial for smooth icing. Any lumps in the sugar will show up on the finished cookies and ruin your design.
- Use Gel Food Coloring: Gel food coloring provides more vibrant colors than liquid and won’t water down your icing as much, making it easier to work with.
- Choose Your Decorating Technique: Depending on your skill level and available time, you can use various decorating methods. Dip the cookies in icing for a simple look, brush it on for a rustic feel, or use a piping bag for intricate designs.
Decorating Techniques Explained: For simple decorations, dip the cookies into the icing or brush it on. For a more refined look, spread on the buttercream before adding sprinkles. If you want intricate designs, use a fine-tipped piping bag to outline each color area, let the lines dry, and then flood the cookie with more icing for a smooth finish. You can also pipe additional designs onto the dry iced cookies. This technique, known as flooding, requires some practice but results in stunning cookies.

Prep Time: 20 minutes
Cook Time: 10 minutes
Chilling Time: 30 minutes
Total Time: 1 hour
Ingredients
For the Cookies
- ½ cup vegan butter, softened
- ¾ cups sugar
- ¾ teaspoons vanilla extract
- 1 ¾ cups all-purpose flour
- 4 tablespoons vegan milk of choice
- 1 teaspoon baking powder
- ¼ teaspoon salt
Favorite Easy Decorating Icing
- 3 cups sifted confectioners’ sugar (the sugar MUST be sifted)
- 1-2 tablespoons vegan milk of choice (adding in more if needed for proper spreading consistency)
- 1 tablespoon light corn syrup
- ½ teaspoon vanilla
- Food coloring, as needed
- Colored granulated sugar and holiday sprinkles, if desired, for topping
Favorite Buttercream Icing
- ½ cup vegan butter, softened
- 16 ounces powdered sugar (16-ounce package)
- 3 tablespoons vegan milk of choice
- 1 teaspoon vanilla extract
- Food coloring, as needed
- Colored granulated sugar and holiday sprinkles, if desired, for topping
Instructions
- Sift the flour, baking powder, and salt into a bowl, and set aside.
- Beat the sugar and vegan butter in a mixing bowl with an electric mixer until creamy, about 2 minutes. Mix in vanilla.
- Stir in the flour mixture until incorporated, then add the milk, 1 tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
- Roll chilled dough on a floured surface to a thickness of 1/4 to 1/2 inch. Dip each cookie cutter in flour and cut out cookies, re-flouring as needed. Place cookies onto the prepared baking sheets.
- Bake in the preheated oven until just turning golden, about 10 minutes. Cool on a wire rack before decorating.
For the Decorating Icing (enough for a thick layer of icing + extra for more elaborate decorations)
- In a small bowl, mix the confectioners’ sugar with milk (start with 1-2 tablespoons, but you will likely need more milk for the perfect spreading consistency).
- Whisk in the corn syrup and vanilla extract until the icing is smooth and glossy. If the icing is too thick, add in a small amount more of corn syrup.
- Divide into as many separate bowls as you wish for different colors. Add food coloring until the desired intensity is achieved, always starting with a smaller amount and adding gradually!
- Paint the icing over the cookies using a brush, dip tops of cookies into icing, or use a piping bag to decorate. Add other decorations as desired, and allow to set on waxed paper or a cooling rack.
For the Favorite Buttercream (enough to thickly frost the cookies)
- Combine the butter and powdered sugar, creaming until light and fluffy using an electric hand mixer or stand mixer.
- Add the milk and vanilla; beat until of spreading consistency.
- Color frosting if desired, then spread onto the cooled cookies. Sprinkle with colored granulated sugar, if desired.
Notes
These cookies should take approximately 1 hour to bake, including preparation, cooking, and chilling time. As there are plenty of different options and skill levels, please note that decorating time is not included in the preparation time for these cookies!
