  • 1 ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs at room temperature
  • ¾ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt plus more to top brownies if desired
  • ½ cup dairy-free chocolate chips or chopped chocolate bar

  • Preheat your oven to 350° Fahrenheit (175°C). Line an 8×8 inch baking pan with parchment paper, allowing the paper to overhang on two sides for easy removal later. Set the prepared pan aside.
  • In a large mixing bowl (or the bowl of your stand mixer), combine the melted coconut oil (or avocado oil), granulated sugar, and pure vanilla extract. Using a stand mixer or a hand mixer on low speed, mix these ingredients for 1 minute, or until they are well incorporated and smooth.

  • Stop the mixer and crack one large egg directly into the bowl. Resume mixing on medium speed for 1 minute until well combined. Pause the mixer again and crack the remaining egg into the bowl. Continue mixing on medium speed for another 2 to 3 minutes, or until both eggs are fully incorporated, and the mixture appears light, fluffy, and slightly thickened.
