Instructions
To Prep the Lobster Tails
Turn lobster tails over so the translucent, belly-side of the shell faces up. Carefully use your thumbs to crack the ribs on the underside of the lobster tail. This makes it easier to separate the meat later.

Once the ribs have been cracked, turn the lobster tails back over so the brown side of the shell faces up. Carefully, using a sharp knife or sturdy kitchen shears, cut vertically down the middle of the top shell from the open end of the lobster tail towards the fin end. Cut through the shell and the top portion of the lobster meat underneath the shell, but do not cut through the fin at the very end of the tail. This cut allows you to easily butterfly the lobster.
If needed, carefully devein the lobster tail before continuing. Locate any black vein (the intestinal tract) in the meat and gently grasp it from the open end of the lobster tail. Carefully pull the vein away from the fin end and out of the tail until it is removed entirely. Discard the vein. This step ensures a clean eating experience.
Carefully slide your finger down the freshly cut portion of the shell (Note: the shell edges will be sharp!) and gently loosen the meat from underneath the shell on both sides, breaking any membranes if necessary. It’s crucial not to detach the meat completely from the fin. Carefully lift the loosened meat up and slightly over the top of the shell so that the beautiful lobster meat sits proudly on top of the shell. This “piggyback” method not only looks stunning but also helps the meat cook evenly. Set the prepped tails aside.

To Cook the Lobster Tails
In a small bowl, combine the salt, garlic powder, black pepper, and paprika. Whisk until all the ingredients are thoroughly incorporated, creating a uniform spice blend. Evenly sprinkle this aromatic spice mixture generously on top of the exposed lobster meat, ensuring every part is seasoned well. This layer of seasoning is key to the incredible flavor.
Pour 1 cup of water (or seafood stock for added depth) into the bottom of your Instant Pot liner. Carefully insert the trivet into the Instant Pot. Arrange the seasoned lobster tails on the trivet inside the Instant Pot, ensuring the exposed lobster meat faces upwards. This positioning allows the steam to circulate optimally, cooking the meat perfectly.

Secure the lid onto your Instant Pot and ensure the vent is set to the Sealing position. Select the Manual (or Pressure Cook) High Pressure setting and set the cooking time for precisely 1 minute. The Instant Pot will take a few minutes to come to pressure, and then the actual cook time will begin for the programmed duration.
As soon as the Instant Pot emits a beep to signal the end of the 1-minute cook time, carefully and immediately perform a Quick Release of the pressure. Use a long-handled spoon or oven mitt to turn the vent from Sealing to Venting. Be mindful of the hot steam. Once the pressure button drops completely, immediately and carefully open the lid away from your face to avoid residual steam.
Using tongs, carefully remove the cooked lobster tails from the Instant Pot the moment the lid is removed (refer back to the ‘Timing is Crucial’ tip above). Transfer the perfectly cooked lobster tails to individual serving plates or a beautiful platter. Garnish with freshly chopped parsley, if desired, for a touch of color and freshness.
